Broccoli Arugula Soup

Broccoli and arugula have a high amount of Vit K that is important for bone health and strength as well as the immune boosting Vit C. They are also rich in phytochemicals that play a role in cancer prevention.



Ingredients

1TB coconut oil


2 tsp garlic, minced (about 2 cloves)


1 cup onion, diced


4 cups broccoli florets


3 3/4 cups water


2 cups baby arugula


¼ tsp salt


Pepper


Lemon


Method

In a medium pot, heat coconut oil over medium heat for 2 min, add onion and garlic and cook until onion is translucent, about 5 min.

Add broccoli and water to pot, increase heat and bring to boil, then reduce heat, cover, and simmer for 5 min or until broccoli is cooked through. Remove from heat

Transfer contents of pot to blender and add arugula or baby spinach.

Blend until smooth and well combined. Season with salt and pepper and finish with a squeeze of lemon.
